Cooking spray
2 cans (15 oz.) Great Northern or Cannellini beans, undrained
1 pound boneless, skinless chicken thighs
1 can (10 oz.) RoTel Original Diced Tomatoes and Green Chiles, undrained
1 cup reduced-sodium chicken broth
3-4 cloves garlic, minced
1 bell pepper, seeded and chopped
1 cup chopped yellow onion
1 tablespoon ground cumin
2 teaspoons oregano leaves
.25 teaspoon dried pepper flakes (more to taste)
1 cup frozen corn kernels (add last half of cooking if desired)
Tips
If thicker chili is desired, drain one of the cans of beans or thicken near the end of cooking with a little cornstarch dissolved in cold water. Adjust spice to suit at the table with hot sauce.
Directions
1. Spray inside of 4-quart slow cooker with cooking spray, or use liner. Place 1 can of beans in slow cooker and mash with potato masher or spoon until smooth. Add second can of beans and all remaining ingredients (may reserve corn for second half of cooking time). Stir to combine.
2. Cover and cook on LOW for 8 hours or on HIGH for 4 hours. Separate the chicken into bite-size pieces or shred with a fork.
