Ingredients
-
Semi Sweet Chocolate Chip Morsels -1/2 cup
*Butterscotch Chips, 1/4 Cup
Coconut, sweetened, 3/4 Cup
Egg, fresh, whole, raw, 2 large
*Flour, white, .5 cup
Brown Sugar, .5 cup, packed
Truvia Natural Sweetener, 4 serving
Vanilla extract, imitation, alcohol, 1 tsp
*Diamond Crystal - Kosher Salt, 0.5 tsp
*Daisy Light Sour Cream, 1/4 Cup
Butter, salted, 4 tbsp
Directions
I toasted the coconut in the oven at 325 for a few minutes, but I suppose it's not a super necessary step. It does taste fantastic though.
-Preheat oven to 325-
1. lay coconut on a baking dish sprayed with nonstick spray and toast in oven (watch closely) if desired.
2. Start with the 2 eggs, whip with beaters (or whisk) until foamy.
3. Add Flour, and both sugars.
4. Mix in sour cream and butter and beat until well blended.
5. Add in vanilla and salt to taste.
6. Add in your toasted coconut, butterscotch and chocolate chips and stir.
7. Pour batter into a greased baking dish.
8. Bake for 45-55 minutes at 325. Look for top to be golden brown and for a toothpick to come out clean when inserted in the center.
