Introduction
So yummy! They look more blue than green because of the blueberries. All of the flavors meld so well that no one can ever detect the spinach! Ingredients
-
1/2 to 1 cup cooked spinach
1 and 1/2 cup blueberries
3/4 cup apple sauce
1/4 cup water
2 bananas
2 Tbsp flax seed, ground
tsp vanilla
tsp cinammon
pinch of: salt, nutmeg, allspice
1 1/4 cups flour (rye, whole wheat, etc)
3/4 cup oats
1/3 cup chopped nuts (walnuts, almonds, seeds even)
Directions
-Puree the spinach with the next 4 ingredients (but only use 1 cup of the berries).
-Stir in the flax and vanilla
-In a seperate bowl mix the rest of the ingredients (except the berries and nuts).
-Add the wet mixture and then stir in the berries and nuts.
-Scoop into oiled muffin tins.
-Bake at 400 for 15 minutes.
