Ingredients

1 lb chicken tenders (plus or minus)
1/4 C Heavy Whipping Cream (optional)
2 eggs
1 C shredded Parmesan
Italian Spices

Tips
Dipping sauces: Ranch dressing or a modified sweet honey mustard: Mix yellow mustard, some dijon, little bit of heavy whipping cream, and a tsp of stevia or other sweetener, to taste.
Directions
Preheat oven to 375
In food processor, mix pork rinds, Parmesan, Italian spices. Pour into a shallow bowl. Mix eggs and heavy whipping cream and pour into second shallow bowl.
Dredge each tender through the egg mixture, then cover completely with the dry mix. Place carefully on parchment paper. Bake 10 minutes, then flip and bake another 10.
Line cookie sheet with parchment paper.
