Ingredients

    1 lb ground turkey
    1 small Yukon Gold Potato, shredded
    1 large carrot, shredded
    1 medium onion, chopped
    3/4 C. Panko crumbs
    3/4 C chicken broth
    2 tsp Kosher salt
    1/8 tsp pepper
    Ketchup

Tips

If you use ground beef, bake @ 450 deg.


Directions

Preheat oven to 400 deg. Line a pan with parchment paper and set aside. Combine all the ingredients except the ketchup and form into 16 meatballs. Top each meatball w/tsp of ketchup. Bake for 18 - 20 minutes or until done.
