Introduction

Ingredients

2 cups all purpose white flour
1/4 cup brown sugar(packed)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1 1/2 tbsp ginger (ground)
1/4 cup vegetable oil
1/2 cup fancy molasses
1/4 cup ginger ale (diet) or orange flav spring water (like Talking rain)
1/4 cup milk (non fat)
2 eggs
1 tsp vanilla
Directions
1.Preheat oven to 350 degrees F/180 degrees. Coat a 9" x 5" loaf pan with non stick spray
2. Combine flour, sugar, baking soda and powder, salt and spices.
3. In separate bowl wisk together oil,molasses,ginger ale/soda water,milk, eggs and vanilla. Add to dry ingredients and stir to combine. Don't over mix.
4. Pour batter into pan, place in center of oven to bake for 40 to 45 min or until toothpick comes out clean.
5. Place pan on cooling rack for 10 min, remove laof from pan and allow to cool completely.
You can lay a snow flake cut out on top of loaf and dust lightly with icing sugar for a nice effect. (kids like to help with this!)
