Introduction
Mild coconut and peanut flavoured curry, supposed to be a side dish to fish. If used as a side dish, half a portion would probaly suffice. Ingredients

1/2 Cup Water
115g/4Oz. Creamed Coconut
1/2 tsp Turmeric
1/2 tsp salt (or to taste)
1/2 large English Cucumber, cut into small pieces
1 large red (bell) pepper, cut into small pieces
50g/2 Oz. salted peanuts coarsely crushed
4 Tbsp Canola Oil
2 Dried Red Chillies
1 tsp Cumin seed
1 tsp Mustard seed
4-6 Curry leaves
4 cloves Garlic, crushed
Tips
Serve with rice. Garnish with a few whole salted peanuts.
Directions
1. Boil water in a heavy saucepan, add coconut, turmeric, salt, and sugar. Simmer until coconut dissolves to obtain smooth thick sauce.
2. Add the cucumber, red (bell) pepper and peanuts and simmer for about 5 minutes.
3. Heat oil in small frying pan, fry the chillies, cumin and mustard seeds until they start to pop. Reduces heat and add the curry leaves and garlic and fry. Pour over cucumber mixture and stir well.
Serving Size: Makes 4 servings or 8 side dish servings (half the calories)
