Introduction

Just when you thought you couldn't improve on the classic BLT, we put it on a stick. Just when you thought you couldn't improve on the classic BLT, we put it on a stick.
Number of Servings: 12

Ingredients

    12 slices reduced-sodium bacon, cut in half
    6 slices whole-grain bread
    2 T butter
    6 Bibb or Boston lettuce leaves
    12 cherry tomatoes

    12 wooden or bamboo skewers

    Optional:
    1/4 cup plus 2 T reduced-fat mayonnaise

Tips

Note: Because you'll have leftover bread, we calculated five slices though you technically need six.
You could also add a chunk of avocado to this!


Directions

Thread two half-slices of bacon onto a skewer, folding it back and forth as you go.
Place on a microwave-safe plate lined with two paper towels. Top with another paper towel and microwave for three minutes. Allow to cool.
Meanwhile, toast the bread and then butter one side of each slice (optional but delicious--it's only 1/2 teaspoon per slice of bread), then use a small fondant or cookie cutter to cut four circles from each piece.
Place one round of toast on the bottom of each skewer.
Remove the top piece of bacon, then fold a lettuce leaf and place atop the remaining piece of bacon. Add a tomato, then replace the bacon and add one more piece of toast.
Serve immediately, with reduced-fat mayo for dipping, if desired.

    This was fun, but a little messy... I would suggest it for children, but the parents must certainly supervise with the skewers! Great for the outside deck parties! - 4/11/15
