Ingredients

    1 cup frozen blueberries
    1 box sugar-free instant vanilla pudding mix
    1/2 tsp sugar (optional)
    1/4 tsp cinnamon
    1 tsp cornstarch
    4 TBSP frozen whipped topping (optional)

Directions

Prepare pudding mix according to package directions and divide into 4 bowls. Put bowls in the refrigerator. Put blueberries in a small saucepan. Add the sugar and cinnamon and about a tsp of water. Heat over medium heat stirring constantly while crushing. Reduce heat to low. Mix the cornstarch in a small dish with about a TBSP of juice from the blueberry mixture. Mix until smooth and the add to the pan with the rest of the blueberries. Stir over low heat until thickened. Remove from heat and briefly let cool. Top the pudding servings with the blueberry mixture. Top each serving with a TBSP of frozen whipped topping if desired.
