Ingredients

    2 bunches Broccoli Rabe chopped(discard stems)
    2 T EVOO
    6 -8 cups water
    1 large onion
    2 cups sliced mushrooms
    1 large tomato
    4 cloves garlic( or more to taste)
    1 t salt
    dash of pepper

Tips

This is a soupy broccoli rabe recipe. Add more salt and pepper to taste. Great with a little parmesan cheese. Approximately 8 servings.


Directions

Saute chopped onion, garlic in EVOO until tender. Add chopped broccoli rabe, water, salt, pepper, tomato and mushrooms. Simmer covered until tender. Approximately 1 - 1+ 1/2 hour.
