Introduction
A pork lovers dream! We follow a primal type eating plan and this is perfect for my bacon loving family. Ingredients

3 lb pork loin roast
Spice Rub
1/2 tsp chili powder
1/4 tsp smoked paprika
1 tsp season salt
1/4 tsp cumin
1/2 tsp cinnamon
5-6 pieces of bacon
Brown Sugar Glaze
1/2 cup brown sugar (We use dark)
1 TBS arrowroot powder or flour
1 TBS apple cider vinegar
1/4 tsp mustard powder
Tips
Play with your spices to adjust for YOUR tastes. We often like to use the pan drippings and some beef broth to make a gravy.
Directions
Preheat oven to 375F
1. Line a roasting pan (Cast iron works great too!) with aluminum foil or lightly grease. Place loin in pan, fat side up.
2. In a small bowl, make your spice rub. Give that pork a good rub down!
3. Wrap the whole thing in bacon.
*Yes, this IS the reason we eat primal ;)
4. Place the roast in the oven and roast for about 50-60 minutes.
5. In a small saucepan under medium heat, combine the ingredients for the glaze and simmer until the sugar is dissolved.
6. After the 50-60 minutes has passed, drizzle glaze over top of pork roast and continue to roast for about 25-35 minutes longer, or until internal temperature has reached 160F.
7. Let rest for about 10 minutes and then slice into 1 inch thick portions.
