Ingredients

    2 cups wheat bran
    1 cup oat bran
    1cup whole wheat flour
    2 teaspoons baking soda
    1 teaspoons baking powder
    1/2 teaspoon salt
    2 large eggs
    2/3 cup yogurt
    1/3 cup canola oil
    2/3 cup honey
    1 teaspoon vanilla extract (optional)
    2 scant cups peeled and mashed very ripe pears (about 3 pears or 17 oz) or 2 15 oz cans pears, drained and mashed + 1/3 cup pear syrup
    1/2 cup finely cut chopped candied ginger, preferably uncrystalized

Directions

Heat oven to 375. Grease muffin pan.
Combine brans flour, baking soda, baking powder, and salt and set aside.
Combine eggs, yogurt, oil, honey, and vanilla in a small bowl and mix well. Pour wet ingredients into dry ingredients and mix until just combined.
Gently stir in pears and ginger.
Generously fill muffin cups with batter. Bake until tooth pick comes out clean, about 25 to 28 minutes. Cool in pan for 10 to 15 minutes, then carefully remove from pan.

    Very Good
    Just what I was looking for. I'm tried them today for a healthy way to use up my pears that turned. I didnt have honey so sub molasses. Yummy fiber snack - 4/27/13
