Introduction

Number of Servings: 8

Ingredients

    3/4 cup milk
    3 large eggs
    1/2 tsp salt
    3/4 c all purpose flour
    3 tbsp unsalted butter
    1 tsp vanilla
    zest of one lemon

Tips

serve with powdered sugar and jam.


Directions

Pre-heat oven to 425 F with rack positioned in bottom third of the oven. Whisk wet ingredients until well combined. Add all at once to the flour, lemon zest, and salt, and whisk just until smooth. Heat a cast iron skillet on the stove top and melt 3 tbsp butter, being sure to coat the sides of the pan. Once butter is melted and has foamed, pour batter in and let cook for a minute, then transfer to the lower rack of the oven and cook for 15 minutes, turn down the heat to 350 F and bake for another 10-15 minutes or until pancake is puffy and slightly browned.

Serving Size: Makes 8 pieces in a 15 inch cast iron skillet

    Incredible!
    This is the first Dutch Baby I've had so I have nothing to compare it with. I was drawn to this recipe mainly because it is somewhat low carb and has simple directions. I added diced green apples to the pan while the butter was melting. My family loved it. Will surely make again! Thanks for sharing. - 10/5/14
