I fix this very flavorful dish and divide into individual servings to take for my lunches - servings can be frozen. This is a very filling dish. The prep time looks daunting, but most of it is getting the spaghettis squash baked to scrape out for the recipe. Ingredients

    2 small spaghetti squash
    1 small red pepper, chopped
    1 small green pepper, chopped
    1 lb. lean ground turkey, browned
    1 can petite diced tomatoes (I blend it but you don't have to)
    1 jar Mezzetta Mediterranean Olive sandwich spread
    1/2 c. shredded parmesan

Directions

Cook spaghetti squash until slightly soft. Cool until you can handle. In the meantime, brown the ground turkey; drain. In a large pan or bowl, combine peppers, tomatoes, sandwich spread and cheese with turkey. Scrape spaghetti squash out of shell and add to turkey mixture. Mix well. Place all in a 2 quart casserole dish and bake at 350 for 30 minutes.
