The perfect Sunday dinner for a busy weekend. You can substitute any cut of beef, even the really cheap ones and it will be so tender it melts in your mouth. The perfect Sunday dinner for a busy weekend. You can substitute any cut of beef, even the really cheap ones and it will be so tender it melts in your mouth.

Ingredients

    9 oz eye of round cut in 3 cutlets
    1 yellow onion, cut into julienne pieces
    1 bell pepper, cut in julienne strips
    minced garlic
    basil, dried
    oregano, dried
    1 T lemon juice
    1 T worchestershire sauce
    1 Cn diced tomatoes
    1 C tomato juice

Directions

Spread a bed of onion, pepper and tomatoes in bottom of slow cooker. Add 1/2 of garlic, basil and oregano. Arrange steak pieces on bed. Top with remaining ingredient. Add tomato juice.
Cover and cook on md high until onions are tender.
Serve over rice.
