Ingredients

    Half cup egg beaters
    1/8 cup spinach
    1/8 cup mushrooms
    1/4 cup cooked rice
    1/4 cup baked potato
    1 slice of ham
    1/8 cup low fat cheddar cheese

Directions

Saute the muchrooms and spinach to cook them down. bake the potato in whatever way you want. Cook rice normally. Portion all of the ingredients out as specified in as many extra large muffin tins as you want to make. Bake in the oven at 350 degrees for ten minutes or until set.

Serving Size: multiply the recipe as many times as needed for as much as you would like to make
