Introduction

This Recipe uses no eggs but is sweet when you are craving something sweet without compromising on nutrition. Super easy and quick to make. Great for a snack on the run or brunch . Ingredients

    250g Chopped dates ( 1 2/3 cups)
    1/2 cup walnuts ( 60 g) chopped
    1/2 cup granulated sugar
    Pinch of salt
    1 tsp Baking soda ( 5 ml)
    20 g / 1 Tbsp Becel light margarine
    1 teaspoon pumpkin spice ( or all spice)
    1 cup ( 250 ml) boiling water
    1 1/2 cups Self raising flour ( 185g)
    6 Tbsp Flax seed ( ground)
    4 Tbsp Wheat Germ

Directions

Place all ingredients except flour and flax seed and wheat germ in a saucepan over low heat until butter has melted. Set aside to cool.
Mix in flour and ground flax seed and wheat germ.
Pour batter into sprayed Loaf pan. ( 4 inch X 8 inch pan /10 cm X 20 cm pan)

Bake at 350 F in a preheated oven for 45 min or until skewer comes out clean
Cool on wire rack for 10 min and then turn out to cool.

Smells great , serves 12
1 serving = 1/12 of a loaf sized slice

    Incredible!
    I thought I'd done something wrong as mine wasn't "pour" consistency, as stated in the recipe. The stiff mixture was right & tastes great. Hubby & teenager even gave the nod of approval with their slices. Thank you. - 9/23/14
