Introduction

Cool salad for hot summer evening. Cool salad for hot summer evening.
Number of Servings: 2

Ingredients

    2 C Cooked Couscous - chilled
    1/4 C chopped Red Onion
    1/4 C chopped Green Bell Pepper
    1/4 C shopped Red Bell Pepper
    10 Green Olives -sliced
    4 TBS Daisy Light Sour Cream (40 cal. per 2 TBS)
    2.65 OZ Plain Greek Yogurt (1/2 of a 5.3oz cup)
    1 clove minced garlic
    4 C Romain lettuce
    6 oz Shrimp, cooked and peeled

Tips

Prepare couscouse and refrigerate overnight.
May use frozen peeled shrimp, thawed.
Best served well chilled.


Directions

Fluff couscous and add onion, peppers and olives. Wisk together sour cream, yogurt and garlic. fold into couscous mix. Let stand a few minutes to flavor through. Arrange 2 Cups Romaine lettuce on each plate. Top with couscous mix then shrimp. Serve with Lemon wedges.
