Ingredients

    1.56 lbs lean beef round cubes or stir fry, raw, cut into cubes or pieces
    1 package McCormick brown gravy mix (low sodium) OR 1 package MF brown gravy mix
    1/2 cup celery, chopped
    1/4 cup chopped raw onion
    1 cup chopped bell pepper (green, yellow or red)
    1 cup Zucchini, chopped
    1/2 cup Yellow squash, chopped
    1 cup green beans - fresh, frozen or canned
    1/2 cup white mushrooms, chopped
    1 tsp oregano
    1 Bay leaf
    1 tsp garlic powder
    1 tsp basil
    1 tsp thyme
    salt and pepper to taste
    1 cup cold water
    An additional 1/2 cup cold water

    Makes 3 servings and each serving = 1 full L&G with 3 greens and 1 lean.

Directions

Early in the day: Place beef round cubes in a slow cooker or crockpot. Add the water. Add celery, onion, bell pepper and herbs and spices. Cook on high for 3 hours. Add zucchini, green beans, mushrooms, and all the spices as well as salt and pepper to taste.
In a small bowl or measuring cup, combine the brown gravy mix with the 1/2 cup cold water and mix well. Pour into crockpot. Cover and continue to cook on high for an additional 1-1/2 hours or until done.

MAKES 3 SERVINGS, each serving equals 1 full lean plus 3 greens.
