Ingredients

    2 chicken thighs-skin and bone removed
    1/2 cup onion diced
    2 cloves garlic
    1/2 cup red sweet pepper
    1 can Margaret Holmes Tomatoe, Corn and Okra, or 1 can corn and 1 can diced tomatoes
    One can diced tomatoes with green chilies
    I can black beans
    3 cups chicken broth
    cilantro for garnish
    cheddar cheese for topping
    avocado for topping

Directions

Cook chicken thighs in dutch oven or large fry pan. Add onion, peppers and garlic until translucent. Add tomatoes, chilies, corn and beans. Add broth and allow to cook down for 15-20 minutes on medium heat. Garnish with cilantro, cheese and avocado and tortilla chips or strips.
