Ingredients

1.5 cups dry roasted peanuts
1.5 cups dates (cut in half and soaked in water for 5 mins)
1 cup gluten-free oats, finely ground
1/3 cup quinoa flakes
1/3 cup unsweetened cocoa powder
3 tbsp brown rice syrup
1 tbsp all-natural peanut butter
1 tsp vanilla extract
1/3 cup mini semi-sweet dairy free chocolate chips
Directions
1) Add peanuts, quinoa, and oats into a food processor and pulse until small crumbs form.
2) Add dates to the mixture one small handful at a time while food processor is running, pausing in between additions.
3) Add cocoa powder. Pulse briefly until just combined.
4) Add brown rice syrup, peanut butter, and vanilla extract. Pulse until combined, scraping edges and bottom, assisting the food processor as needed.
6) Dump mixture into a large bowl, thoroughly blend in chocolate chips via hands (act quick before the chocolate starts to melt!).
7) Dump into a parchment paper lined 8x8 inch pan. Flatten to corners and edges with palms of hand and flat spatula. Press down firmly.
7) Put in freezer for 30 minutes, then cut into 32 pieces. Store in fridge.
