I LOVE Chicken & Dumplings so when I found this I added my own spin to it to add homemade dumplings. You can have a full cup of this hearty comfort food for only 240.8 calories and 6.6 grams of fat = 24.68% fat content! This is a very fast and easy to make! Ingredients

    6 Cups Chicken Broth
    1 lb. boneless chicken, diced small
    1 C. shredded, diced or canned Carrots
    2 Stalks Celery, Diced
    1 can Healthy Request Cream of Chicken 98% Fat Free
    1 tbsp. sage
    Salt & Pepper to taste

    For Dumplins...
    2 Cups Jiffy Baking Mix
    2/3 Cup Skim Milk

Directions

1. In large pot (I use an 8qt.) Boil the chicken breasts, carrots and celery in the chicken broth about 15 minutes.
2. Add cream of chicken soup, sage, salt and pepper, then bring back to boil.
3. In a bowl mix together 2 C. baking mix and 2/3 C. milk. Drop by spoonfuls onto hot mixture.
4. Cook uncovered 10 min on low.
5. Cover and cook 10 more minutes.

Makes approximately 8 servings 1 cup each.

    I made this recipe for lunch today. I thought the dumplings were gummy and no flavor. The soup part is very good. I will make this again but I will add some Italian seasoning like Prsplace suggested. - 10/26/20

    Very Good
    I used Italian seasoning instead of just sage for a nicer flavor. I left out the chicken soup and added frozen peas and frozen corn. This is a very nice base recipe and I will def make it again! - 9/29/20
