Ingredients

    2 cups chicken stock
    1 cup dry quinoa
    1 can albecore tuna in water, drained
    1 small can whole green chiles, chopped
    1 can cream of chicken soup
    3 oz greek yogurt cream cheese
    1 cup sharp cheddar cheese, shredded

Tips

I didn't have peas, but found a can of chiles. Decided to substitute them. Turned out really good!


Directions

Bring chicken stock to a boil. Add quinoa, reduce to a simmer and cook 15 minutes, covered. Once done, remaining ingredients. Heat to boiling; reduce heat and simmer for 10-15 minutes until cheeses are melted.
