Ingredients

2 1/2 lbs sweet potatoes, 3 or 4
2 Tablesoons olive oil
1 medium onion, sliced
salt and pepper to taste
1 red bell pepper, thin sliced
2 jalapenos, thin sliced and seeded
3 garlic cloves, coarse chopped
4 cups low sodium vegetable broth
2 tsp white wine vinegar
1 tsp honey
1/4 tsp curry powder
1 small granny smith apple, diced
1/4 cup low- fat plain yogurt
Directions
preheat oven to 400.
Roast potatoes on baking sheet for 1 hr, or until soft.
Cool, then remove skins.
In large pot, heat oil on medium heat, add onion, salt and pepper, cook until soft, carmelized about 20 minutes.
Add peppers and garlic- cook 5 minutes then add potatoes and broth. Bring to a boil, reduce and simmer 20 minutes.
Puree in batches.
In small pot bring honey, curry and vinegar to a boil, add apples and stir one minute. Remove from heat.
Serve soup with some of the apples and yogurt.
