Ingredients

1 lb pork tenderloin cut into 1/2" slices
1/2 tsp salt-free seasoning blend
1 tbsp peanut oil
3 green onions
1 tbsp lemon juice
1 can Campbells Healthy Request Golden Mushroom Soup
1/4 cup water
5 oz fresh baby spinach
1 1/2 cups hot cooked barley
Directions
Season pork with seasoning blend.
Heat oil in skillet and brown both sides of pork.
Reduce heat to medium and add onions, garlic and cook/stir for 1 minute.
Stir in lemon juice, soup and water, heat to boil.
Stir in spinach.
Return the pork to the skillet.
Cover and cook 5 minutes until pork is cooked thru and spinach is wilted.
Seve pork and sauce with barley.
