Ingredients
-
1 TBSP Olive oil
1 1/2 lb lean stew meat;cut into small bites
1 Large onion;chopped
5 tsp minced garlic
1pkg chili seasoning
1pkg taco seasoning
1 TBSP Chili powder
1 tsp. Cumin
1 tsp pepper
1 tsp Oregano
3 tsp Onion powder
2 C beef broth
1 can original rotel or tomatoes with green chile's
3 cans diced tomatoes
2 small cans tomato sauce
1 can light or dark Kidney beans;rinsed and drained
3 cans mild chili beans
1 can black beans; rinsed and drained
1 C decaf coffee
3 TBSP grape jelly
Directions
1. Saute stew meat in non-stick skillet with 1TBSP Olive oil(I use a 7 1/2 quart electric skillet so everything fits) until brown.
2. Add chopped onion and garlic and saute until onions are translucent.
3.Add all dry ingredients and stir to coat meat and onions.
4. Add the beef broth and bring to a bubble.
5. Add rotel, tomatoes, tomato sauce and stir.
6. Add all of the beans and stir.
7. Add 1 cup coffee plus an extra cup of water.
8. Bring to a boil and add the grape jelly.
9. Turn down and simmer for at least 1 1/2-2 hours*. Be sure to stir occasionally so it doesn't stick or burn on the bottom. The longer it simmers the thicker the chili will be.
*You can put this in a slow cooker After completing step 4. Cook on low 8-10 hours high 4-6 hours
