Ingredients

    1 cup dry quinoa, prepared with water
    1 cup diced English cucumber (peeled and seeded)
    1/4 cup Trader Joe's unsweetened and unsulfured dried cherries,
    1/4 cup chopped fresh parsley
    2 Tbsp. EVOO
    2 Tbsp. organic white wine vinegar
    1/4 tsp. seas salt
    1 tsp black pepper

Tips

Could make a nice light meal on its own with some added protein (toasted almonds or pistachios) and leftovers are great for breakfast!


Directions

Prepare quinoa according to package directions; spread on paper-towel-lined baking sheet to cool and dry. Add to large bowl.

Chop cucumbers and parsley, and halve dried cherries. Add mixture to cooked quinoa.

Whisk to combine EVOO, vinegar, salt and pepper in small bowl. Pour over salad mixture and stir well to combine.

Serving Size: Makes 6 side-dish servings.
