2 Tbsp Roasted Red Pepper and Parmesan Salad Dressing
1 clove minced garlic
dash of cayene pepper
8 oz boneless, skinless chicken breast cut into strips
3 Tbsp Lite Cream cheese
8 oz roasted red peppers thinly sliced.
1 cup cooked frozen chopped spinach
1 1/2 cup cooked brown rice.
2 Tbsp grated Parmesan cheese.
salt and pepper to taste
Directions
1.Heat Salad Dressing in a deep skillet on med heat. Add garlic and cayene and cook 1 min until fragrant.
2.Add chicken and cook 5 min or until no longer pink.
3. Add cream cheese and stir until melted.
4. Add peppers, cooked spinach and rice, gently stir and cook until heated through.
5. Sprinkle with Parmesan and serve.
Serving Size: makes 2- 2 cup servings.
