Introduction

I often skip the seperate spices in favor of using 1 1/2 to 2 T. good fresh curry powder. Then just add the garam masala, paprika, amchoor. Ingredients

    2 T. peanut or veg. oil
    2 medium onions, peeled and minced
    8 cloves garlic, peeled and minced
    1 T. ground coriander seed
    2 t. ground cumin seed
    1/8 to 1/2 t. ground chile or cayenne
    1 t. ground turmeric
    1/2 c. chopped tomatoes
    4 c. cooked chickpeas
    2 t. ground roasted cumin seeds
    1 T. ground amchoor
    2 t. sweet paprika
    1 to 2 t. garam masala
    1/2 t. salt, or to taste
    1 T lemon juice, or to taste
    1 fresh hot green chili, minced
    2 t. finely grated fresh ginger

Directions

Saute onions and garlic in oi until soft. Add coriander, cumin (not roasted), chile and turmeric. Stir together and then add tomatoCook together for a minute or as, then add drained chickpeas and 1 cup water. Add the ground roasted cumin, amchoor, paprika, garam masala, salt and lemon juice. Stir again, then cover , reduce heat and simmer for 10 minutes. Remove cover and add minced green chile and ginger. Stir and cook, uncovered, for another 30 seconds or so.
