Ingredients

    1 lb. Ground Pork
    1 medium Onion, diced
    1.5 Red Pepper, diced
    1 stalk Celery, diced
    1 Jalapeño Pepper, finely diced
    1 Tbsp. Olive Oil

    1- 14 oz (398 mL) can Diced Tomatoes
    1- 5.5 oz (156 mL) can Tomato Paste
    1- 19 oz (540 mL) can Kidney Beans, drained and rinsed

    1 tsp. Chili Powder
    0.5 tsp. Paprika
    0.5 tsp. Cayenne Pepper

Tips

Substitute white kidney beans or mixed beans if desired.
Wear gloves while handling jalapeño pepper to avoid burns, and remove seeds and ribs for a milder flavour.


Directions

Sauté veggies in oil in large fry pan until crisp tender. Add pork and cook until no pink remains and a nice brown glaze forms in pan. Stir in seasonings, adjusting amounts to taste.

Meanwhile, in a large saucepan combine tomatoes, tomato paste, and beans. Cook over medium- low heat, stirring often. Add pork and veggies, stirring to combine. Deglaze fry pan with 1/4 cup water, add to chili in saucepan.

Cook about 15 minutes to blend flavours, stirring often.
