These delightful lunch wraps are amazingly "meaty" and go well with a wide variety of vegetables, ESPECIALLY tomatoes and cucumber. Tastes great over rice as well! Ingredients

Chickpeas (garbanzo beans), 3 cups cooked
Olive Oil, 3 tbsp
Onions, raw, 2 cup, diced
Garlic, 5 clove minced
Ginger Root, 2" peeled and minced
Curry powder, 3 tbsp
*Cumin seed, 1 tsp
Pepper, red or cayenne, .25 tsp
Turmeric, ground, .25 tsp
Salt, 1 tsp
Whole wheat tortillas, 8
Directions
1) In a deep skillet, heat oil over medium heat. Saute onions for 8 minutes, or until quite soft.
2) Add garlic and ginger, saute until fragrant, 2 minutes. Add remainder of spices and stir, it should form a paste.
3) Add the chickpeas and enough water to cover (about 3 cups) and bring to a high simmer. Simmer for 50-60 minutes, stirring ocasionally.
4) Place a few tbsp of channa in a tortilla, add selected vegetables. Wrap and enjoy!
