Ingredients

Hormel Little Sizzlers Pork Sausage, 6 links
1 Sweet Potato, peeled and diced
.5 C Yellow Onion, diced
Rosemary
Garlic Powder
Chili Powder
Salt
Pepper
2 tsp Pancake Syrup
1T water
4 Eggs, fried
Tips
I cook for one most of the time, so I fry the eggs as needed for each serving.
Directions
Place 6 frozen sausage links on a plate. Microwave 1 minute to thaw, then cut into small pieces and place in a skillet on med temp.
Peel and dice sweet potato. Microwave with a splash of water for 4 minutes.
Chop 1/2c yellow onion and add to skillet. Watch for onions to start softening.
Add seasonings. Be sure to crush the dried rosemary when you add it.
Then add sweet potatoes to skillet. There may be a splash of water still in the bowl, go ahead and add that too because it helps the seasonings to bloom.
When sausage is fully cooked and onions have started to caramelize, turn off the heat. Add 2 tsp pancake syrup and stir to combine.
Fry 4 eggs. Serve 1/2c hash with 1 fried egg per portion.
