Ingredients

    2 tins water-packed tuna, drained
    2 eggs
    1/4 C. pitted drained black olives, chopped coarsely
    1/4 C. grated parmesan
    2 green onions, chopped
    1/4 C oat bran
    spray grapeseed oil

Tips

Can serve with lemon crème fraiche or small salad.


Directions

Mix together tuna, egg olives, Parmesan, green onion and oat bran. Shape into 8 patties. Refrigerate for at least an hour.
In a large non-stick skillet on medium, heat the oil and cook the patties for about 2 - 3 minutes each side, until browned. Reserve on a paper towel to absorb excess oil.

Serving Size: makes 8 small patties
