Introduction

Ingredients

2 tbsp Extra Virgin Olive Oil
1.5 cup Onions, raw, chopped
1 oz package dried Oyster Mushrooms, reconstituted
2 cups of cooked & deboned skinless chicken thighs
1/2 cup Whole Milk
Black Pepper, White Pepper & Herbes de Provence to taste (about 1 tsp each)
Tips
For thicker consistency, add cornstarch (make sure it's gluten free) or other thickener.
Serve over buckwheat groats, rice, quinoa, etc.
Directions
Cover dried mushrooms in water and soak for at least 20 minutes until reconstituted.
Saute onions in EVOO over medium heat.
Drain mushrooms & reserve water.
Add reconstituted mushrooms, pre-cooked chicken, spices, milk.
Cook over medium heat.
Add some reserved water from mushrooms to maintain moisture as you cook.
Serving Size: Makes 5 2-cup servings
