Ingredients

    2 Tbs. Grape seed oil
    1 small onion dice
    1 red pepper diced
    5 oz. cooked pork chop diced
    3 cups raw spinach
    Salt and pepper to taste
    Dried oregano and ground cumin to taste
    4 Tumaro's 9 grain with chia wraps
    8 oz. shredded light Cabot cheddar
    Canola spray

Tips

Add jalapeños if you like heat.


Directions

Heat oil in a large skillet sauté onion and red pepper until softened. Add salt and pepper to taste along with cumin and dried oregano. Add pork and warm through. Add spinach in batches and cook until wilted. Lay out wraps, put .5 oz. shredded cheese on half, put in a quarter of the filling, top with .5 oz. more cheese. Fold the wrap in half. In a new skillet spray canola spray lightly, spray the wrap on one side and heat to golden brown, flip and repeat.
