Ingredients

*1/2 cup white sugar
*1/4 cup brown sugar (packed)
*1/2 teaspoon vanilla
*1/2 Cup Coconut Oil (melted)
*3/4 Cup Coconut Flour
*1/4 Teaspoon salt
*4 Eggs (room temperature)
*2 tablespoons Cinnamon
Directions
Beat white and brown sugar, Coconut oil, Vanilla, and eggs.
Stir coconut flour and salt, stir into wet mixture.
Let sit for 5 minutes (refrigerate if too wet).
Scoop the dough and roll it into balls.
Roll balls in cinnamon.
Put parchment paper on baking sheets, Put cookie balls on baking sheets.
Squish balls to flatten them.
Bake them at 375* for 15-20 minutes.
Serving Size: makes 3 dozen golf ball size cookies (1 cookie=1 serving)
