Ingredients

    3/4 c. cocoa powder
    1/3 c. coconut flour
    1/3 c. tapioca flour or arrowroot
    1/2 tsp. baking soda
    1/2 tsp. baking powder
    1/4 tsp. salt
    **
    5 eggs
    1 c. applesauce, unsweetened
    1/4 c. honey
    1 T. vanilla extract
    1/2 tsp. liquid vanilla stevia
    1/4 c. melted coconut oil

Directions

1. Preheat oven to 325 degrees
2. sift dry ingredients together
3. in separate mixing bowl, use an electric mixer to combine the wet ingredients, adding melted coconut oil last.
4. add the dry ingredients to the wet ingredients, and combine them with the electric mixer.
5. grease a bundt pan
6. sift 2 T. cocoa powder in the greased bundt pan. Tap the pan to coat evenly and shake out the excess.
7. pour the batter evenly into the pan and bake for about 40 minutes.
8. let the cake cool in the pan for 15 minutes, then go around the edges (esp. the center) with a butter knife to make sure cake is loose.
9. place a small wire cooling rack over the top of the pan and carefully flip the cake over onto the rack. Remove the pan and cook completely before cutting.
