    1 1/2 cup whole wheat flour
    1 1/2 cup ground flaxseed
    3/4 cup brown sugar
    1 tbs baking powder
    3/4 tsp nutmeg
    1 1/2 tsp cinnamon
    2 cups milk (1%)
    1 egg


Pre-heat oven to 350. Mix all ingredients, stir until well mixed. Spray muffin pan iwth cooking spray or use pan liners. Fill with batter until 3/4 full and bake for 25 - 30 minutes. Makes 12 large or 18 small muffins. 119 calories per serving for 18 muffins. 179 calories per if you make 12 large

    I made a vegan version by using an egg substitute and they turned out great. Nice texture and density, moist and not too sweet. It is a perfect basic muffin that will be easy to jazz up in any variety of ways -- all while incorporating more ground flaxseed into the diet. - 5/28/09

    I just made these this morning exactly as written and I thought they were great! My 20 month old daughter devoured a whole one by herself in about 3 minutes!! These are a fantastic, healthy snack that you can easily take on the go! Thanks, Judy! - 1/22/09
