Ingredients

    1lb of Stew Beef or Pork
    16 baby carrots, washed
    3 cups corn, frozen
    3 cups peas, frozen
    3 large potatoes, cut into bite size pieces
    3 large onions, white or yellow, chopped
    4 cans Chopped Tomatoes with green chilis
    4 cups Green Chilis, chopped - fresh or frozen is best but can be substituted with canned
    4 cups of water (possibly more)
    3 tsp Garlic

Directions

In a frying pan, brown the meat and the drain all of the fat

In a Dutch Oven or 6qt or larger sauce pan, put in a little bit of water and the onions. Cook over Medium/Medium High heat until oinions start to look clearish. Add the green chili, canned tomatoes (including water from can), meat, carrots, corn, peas, and potatoes. Add water, just enough to cover all other ingrediants. Mix. Add in garlic and mix well. Stir occassionally. Bring to a boil and reduce heat. Cook until carrots and potatoes are soft. Serve in big bowls.
