Ingredients

    2 tsp olive oil
    2 medium scallions, thinly sliced
    3 cloves garlic, minced
    3/8 c dry quinoa
    3/4 c dry jasmine rice
    1 14.5 oz can low-sodium chicken broth
    1/2 cup dry black beans
    1 tsp ground cumin seeds
    1/4 tsp cayenne pepper
    dash salt
    1/4 tsp fresh ground black pepper
    1 cup fresh corn
    2 Tbsp chopped fresh cilantro

Directions

Add oil, scallions and garlic to a medium sauce pan. Cook about 10 minutes over medium high heat, to lightly brown the scallions and garlic.
Add the quinoa, rice, chicken broth, black beans, cumin, cayenne pepper, salt, and black pepper. Stir to mix, bring to a boil, then reduce heat, cover, and simmer 15 minutes.
Add corn and simmer 5 more minutes.
Remove from heat and stir in cilantro.

Serving Size: makes 5 3/4 cup servings
