Introduction

A healthy, light dinner/salad with an Indian twist! made with leftover veggies !! great for a summers.. a version of this is often sold as street food in India! Ingredients

    0.5 cup raw chickpeas
    1/2 onion - very thinly sliced
    1 small tomato- diced
    1 red potato - cubed
    8-10 cauliflower florets
    1/2 green bell pepper- sliced
    1/2 red bell pepper-sliced
    0.5 carrot - grated

    1/2 cup chopped fresh coriander leaves
    1 tbsp minced mint leaves
    1 hot green chilli
    1.5 tsp grated ginger
    juice of 1/2 lemon (or more!)
    0.5 tsp chat masala

    salt







Tips

chat masala provides the "Indian twist"... it is available in the Indian stores, you may substitute using dry mango powder, or cumin powder, or just extra lemon juice...


Directions

Soak the chickpeas for 12 hours, drain, rinse and pressure cook them with cauliflower and potatoes for 20-30 minutes until done (longer if using a pot). drain the water. keep warm

combine all the veggies and cilantro leaves, mint leaves, ginger, hot chilli and lemon juice.

mix well. adjust salt and chat masala to taste.

at the time of serving, combine the warm chickpeas/potato/cauliflowers with the cold veggie salad.
