Introduction

I substitute Splenda brands in place of sugar/brown sugar I substitute Splenda brands in place of sugar/brown sugar
Number of Servings: 8

Ingredients

    3-4 med to large sweet potatoes, peeled, diced, boiled
    3/4 c. Splenda sugar substitute
    2 eggs, well beaten
    1 T. vanilla
    1/2 c. low-fat margarine, melted

    TOPPING:
    1 c. Splenda brown sugar
    1/3 c. self-rising flour
    1 c. pecans, chopped
    1/3 c. low-fat margarine, melted

Directions

Peel potatoes; dice, then boil. After boiling; cool then mash potatoes adding the next four ingredients to mixture until well blended. Pour into 9 x 13 greased baking pan.

Mix all topping ingredients together and pour over top of potato mixture. Bake at 350 for 30-40 minutes.

Makes 8-10 1/2-cup servings.
