Ingredients

    6 oz uncooked whole wheat pasta
    1 onion
    1 bell pepper
    2 tomatoes
    1 stalk broccoli
    about 10 green beans
    1.5 cup mushrooms
    pesto sauce

Directions

Boil 3 quarts of water with a pinch of salt. Add the pasta and cook to taste. Heat a large skillet with a little bit of oil. Meanwhile, chop all the vegetables to uniform size. Add the onions and mushrooms to the skillet and cook until the onions soften and the mushrooms release their water. Add the broccoli, green beans, and pepper. Cook until veggies are done. Add the tomatoes and cook until just warm. Combine the veggies, pesto, and pasta. Serve immediately.

Serving Size: Makes 6 2-cup servings
