Ingredients

1 3/4 cups flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1/3 cup butter
2/3 cup sugar
1 egg, beaten
1 1/4 cups mashed bananas(aprox. 2 or 3 whole)
1 1/2 teaspoons vanilla
Tips
You can also add half a cup of walnuts, but that's completely optional. If you do add them, before to add them when you add the flour mixture.
Directions
Preheat oven to 350ºf; put muffin liners in tin.
Mix together the flour, baking powder, and salt in a small bowl.
In a large bowl, cream butter and sugar together until light and fluffy. Add egg, bananas, and vanilla. Mix well.
Add the flour mixture to the banana mixture. Beat until smooth.
Pour the batter into muffin tin. Bake for 20 mins or until toothpick inserted in center comes out clean.

Serving Size: this makes 12 muffins when made in a 1-and-a-half inch deep muffin tin. I know this doesn't make much sense, but my daughter wrote this and isn't sure how to put in the muffin tin size.
