Introduction

Number of Servings: 20

Ingredients

    4 cups Egg Substitute
    2 cups broccoli, finely chopped
    1 cup red or green pepper, sliced thin
    1 small red onion, sliced thin
    2 cups low fat Cheddar cheese, shredded
    10 slices Canadian Bacon, shredded
    1 tsp garlic powder
    1 tsp cajun spice
    Salt & Pepper to taste

Directions

Blanch the broccoli for 3 minutes in boiling water. Cool in ice water to stop the cooking.

Mix all ingredients, except the cheese, together and pour in a 10 x 15 baking dish that has been sprayed with cooking spray. Sprinkle the cheese evenly over the top. Bake at 350 degrees for 30 minutes, or until set in the middle.
