Ingredients

1 pound boneless pork chops
1 each med to large pepper (green, red & yellow)
1/2 large onion
2 cups fresh sliced mushrooms
I packet Taco Bell Fajita seasoning mix
6 tbsp olive oil
Directions
Clean and slice into strips each of the peppers
Clean and slice 1/2 onion
Clean and slice mushrooms
Trim any fat on pork chops, slice into strips
I prefer sauting the peppers seperate from the onion and mushrooms.
Coat bottom of non-stick pan with olive oil
(approx 2 tbsp in each pan)
Add peppers to one, onion mushrooms to the other.
Coat bottom of a 3rd pan with 2 tbsp olive oil, cook sliced pork chops.
When the pork is cooked through add packet of fajita mix, follow packet directions.
Mix all three (peppers, onion/mushrooms, meat) together. Let simmer for flavors to blend.
Serve on warm tortilla or without (I prefer it without)
