Introduction

Number of Servings: 12

Ingredients

    1 tbsp sea salt
    1 lb wholegrain or brown rice spiral pasta
    1 cup Radish Top Pesto
    1/4 cup non-fat, plain Greek yoghurt
    2 tbsp low sodium vegetable broth
    1/2 tbsp sugar
    1 large red pepper, diced
    salt and pepper, to taste

Directions

Bring a large pot of water to a boil and add the salt.
Add the pasta and cook just to "al dente". Drain and transfer to a bowl.
Mix together the pesto, yoghurt, broth and sugar, add to the warm pasta and toss to combine well.
Fold in the red pepper. Adjust salt and pepper to taste.
This is good warm or room temperature.

Serving Size: Makes 12 (side dish) servings
