Ingredients

    Ingredients:

    2 - 5 ounce cans of pink salmon in water
    1/4 cup minced onion
    1/4 teaspoon black pepper
    1/4 teaspoon Cajun Seasoning
    1/4 teaspoon Mrs. Dash lemon pepper seasoning
    1/4 teaspoon lemon juice
    10 low-salt saltine crackers crushed finely
    1/4 cup egg beaters
    1/8 cup water
    3 tablespoons canola oil

Tips

Try adding various seasonings for a different taste.
Add a fourth cup chopped celery to the salmon mixture.


Directions

Break the salmon into smaller chunks and put into a bowl. Then add the onion, the seasonings, and the lemon juice. Next add the crushed crackers, egg beaters, and water as needed. Shape into four patties.

Heat up the oil in the skillet on medium high heat. Fry the patties until browned. Then turn to brown the other side. Set the patties on a paper towel to drain excess fat. Then serve warm.

Serving Size: Makes four patties. Serving size is two patties.
