Ingredients

    2 tablespoons olive oil, divided
    2 skinless, boneless chicken breast halves, cut into 1-inch cubes
    1/4 teaspoon salt
    dash black pepper
    2 medium carrots, sliced diagonally
    1 cup chopped sweet bell peppers, color of choice
    1/2 cup chopped onion
    1 12-oz. package frozen broccoli, thawed
    2 cloves garlic, minced
    2/3 cup reduced sodium, fat-free chicken broth
    1 teaspoon dried basil
    1/2 cup grated Parmesan cheese, divided
    12 oz. angel hair pasta, ww used in recipe

Directions

Sprinkle cubed chicken with salt and pepper. Toss.

Heat 1 tablespoon of the oil in a medium skillet over medium heat; add chicken. Cook, stirring, until chicken is cooked through, about 5 minutes. Remove from skillet and drain on paper towels.

Heat remaining oil in same skillet. Begin heating water for pasta. Add carrots, peppers, and onion to skillet; cook, stirring, for 4 minutes. Add broccoli and garlic; cook, stirring, for 2 more minutes.

Cook pasta according to package directions. While pasta is cooking, add chicken broth, basil, and half of Parmesan to skillet. Reduce heat and simmer for 4 minutes, covered.

Drain pasta. Place in a large serving bowl. Top with chicken and vegetables. Sprinkle remaining Parmesan over top. Serve immediately.
