Cream together
1 stick softened butter
1/4 cup packed brown sugar
Add
1 tablespoon vanilla extract
Mix well - then add
1/4 cup white rice flour
3/4 cup oat flour
1/2 cup finely chopped pecans
Form in to 3/4 to 1 inch balls - cool cookies on tray in fridge for 5 minutes - bake at 350 degrees 13-15 minutes. Cool on wire rack. Added options: roll in powered sugar or dip half the cookie in melted dark chocolate chips.

Directions
Cool formed dough balls on a cookie sheet in the refrigerator for 5 minutes. Bake at 350 degrees for 13-15 minutes. Cook baked cookies on wire rack.
